Go-To Summer Salad

We have been on a major Greek kick in our house. Now that the tomatoes are going off, the local cucumbers are fresh, and the herbs are perfect, we can literally go to the garden for dinner (minus the cucumbers because I forgot to plant them.)

Anyway, here is my delicious modified Green Salad that we serve with fish, greek meatballs, or just on it’s own. I promise you, it’s delish!

Recipe:

  • A basket - or two of cherry, heirloom or roma tomatoes - chopped.

  • 1 large cucumber peeled and diced

  • 1/4 red onion thinly sliced

  • 1/2 cup (or more if you like) pitted kalamata olives

  • A handful of basil, mint and green onion chopped

  • Feta cheese in brine - crumble as much as you want on top

  • Olive oil to drizzle

  • A squeeze of lemon juice to finish
