Celery Soup

If you are looking for a soothing and nourishing soup…that is SO easy to make…look no further than Celery Soup. I am a big fan of easy, healthy meals with minimal ingredients to get me through a busy week. This weekend I wasn’t feeling 100% and wanted something warm and healthy to speed up my recovery. After a quick look around the kitchen, I settled on Celery Soup. It took only 10 mins and I used only 5 ingredients!

Now, you can make this creamy, keep it vegan, add potatoes to thicken it up, or just keep it simple, I kept it really simple.

Here is what you need:

  • 1 pack celery - chop up and disregard the leaves

  • 1 white onion - chopped up

  • 5 cloves of garlic - diced

  • 2 cups stock - I used chicken

  • Olive Oil - as much as you want to sautee the veggies

Once your celery, onion, and garlic are chopped, sauteed in olive oil until soft. Probably about 5 mins. Once the veggies are soft, add your stock and bring it to a simmer. I added mine slowly to make sure it was the consistency I liked. After about 5 mins of simmering, add everything to a blender - or use an emulsion blender - to puree. Bring it back to your pot to simmer then serve!

I added some salt, pepper, and celery tops to mine, but you can add parmesan cheese, pepper flakes, or a toasted crostini if that sounds good!
