Spicy Chicken + Jalapeño Taquitos

One of my go-to dishes for dinner parties, or when we have friends over, are Spicy Chicken + Jalepeño Taquitos.

I have learned that not many people make taquitos so it’s always fun to put a big batch together. Sometimes I make a really good veggie version with black beans and cheese, but other times I want more kick. Here is something fun to try while you are home for the holidays - on lockdown, or not.

Ingredients

  • 1 Pack of small corn tortillas

  • 2 chicken breasts 

  • 1/2 cup of pepper jack cheese 

  • 1 4oz can of diced green chilis

  • 1 4oz can of jalapeños 

Directions:

Cook your chicken with any seasoning you want. You can slow cook it in the crock pot or oven. Once it’s cooked shred or put it into a food processor to cut it down. 

While the chicken is cooking, mix together the jalapeños, green chilis, and cheese. Add the chicken once it’s done and mix well. 

Warm your tortillas one at a time on the burner. When they are heated, add a spoonful of the mix in the middle of the tortilla and spread it out. Roll the tortilla as tight as you can and repeat until your pan is full - or you run out of tortillas or mix. 

Preheat the oven to 350 and bake for 20 minutes.
Top with queso and cilantro and serve!
